Metabolic Kitchen

The Metabolic Research Kitchen provides the University of Virginia General Clinical Research Center (GCRC) with a full-time research dietitian, and three metabolic chefs. The research kitchen is designed to provide all clinical research subjects with meals scheduled and prepared in accordance with specific research protocols. Our research kitchen offers constant, metabolically balanced, controlled nutrient, and weighed diets for protocols from multiple disciplines such as surgery, endocrinology, gastroenterology, allergy and immunology, nephrology, and neurology. The research kitchen staff is responsible for maintaining scientific accuracy when preparing these meals. Additionally, normal (control) subjects enjoy varied gourmet meals prepared by the research kitchen staff. The research dietitian manages the research kitchen, develops palatoble research diets from the investigator's specifications, maintains detailed dietary data records, and offers relevant patient instruction and advice to investigators.
