Yummy Fudgy Brownies

(Makes 30 small pieces)

1 can of UNSEASONED black beans
2 oz. semi-sweet chocolate
2 oz. unsweetened chocolate
1 tbsp. light butter
6 egg whites
1 cup sugar
3 tbsp. all-purpose flour
2 tbsp. instant espresso coffee powder
1/2 cup chopped walnuts (optional)

Preheat oven to 350°. Spray a 9x13-inch or 8x10-inch pan with cooking spray. Place beans in a colander and rinse well, drain. Place chocolate and light butter in microwave-safe dish and heat for 60-90 seconds, stirring every 30 seconds until smooth. 

In a food processor or blender, blend beans and 2 egg whites until smooth. In a large bowl, combine bean puree, sugar, flour, espresso powder, and remaining egg whites. With an electric mixer, beat until well mixed. Mix in the melted chocolate.

Pour brownie mix into pan and sprinkle nuts over top. Bake for 30-35 minutes until brownie pulls away from sides of pan. Cool completely.
